Stir-fried beef and asparagus with oyster sauce
A quick and easy stir-fry for nights when you'd rather be relaxing.
Ingredients (13)
- 500g beef fillet, well trimmed
- 1/3 cup (80ml) Chinese rice wine (shaohsing) or dry sherry
- 2 tbs oyster sauce
- 1 tbs caster sugar
- 1 tbs light soy sauce
- 1 tbs Chinese black vinegar (chinkiang)
- 1/4 tsp sesame oil
- 2 tbs peanut oil
- 1 onion, thinly sliced
- 2 garlic cloves, sliced
- 2cm piece ginger, cut into matchsticks
- 2 bunches asparagus, trimmed, halved
- Steamed rice and thinly sliced spring onion, to serve
Method

1.Enclose the beef in plastic wrap and place in the freezer for 30 minutes (this will make it easier to slice).

2.Using a sharp knife, slice the beef into wafer-thin slices. Place in a bowl with half the wine and 1/2 teaspoon salt. Set aside. Combine the oyster sauce, sugar, soy sauce, vinegar and sesame oil in a small bowl. Set aside.

3.Heat 1 tablespoon oil in a wok over high heat. Add onion, garlic and ginger and stir-fry for 1 minute until softened. Add asparagus and stir-fry for a further minute until just cooked. Remove everything from the wok to a bowl and set aside. Add remaining oil to wok and heat over high heat. Stir-fry beef, in batches, for 1-2 minutes until just cooked through. Add oyster sauce mixture, then return vegetables to wok and toss to combine. Serve with rice, garnished with spring onion.
