Stir-fried garlic shoots with beef
This Asian-inspired takeaway classic is best enjoyed with a cold glass of beer!

Ingredients (9)

  • 20g salted butter
  • 1/4 cup (60ml) vegetable oil
  • 300g frozen beef slices (from Asian grocers, substitute thinly sliced beef), defrosted
  • 1/2 tsp white pepper
  • 1 bunch garlic shoots (from Asian grocers), chopped to 3cm lengths
  • 2 garlic cloves, finely sliced
  • 2 tbs oyster sauce
  • 2 tsp white sugar
  • 2 tbs Chinese rice wine (shaohsing)

Method

  • 1.
    Heat the butter and 2 tbs oil in a wok and fry the beef slices on a high heat until fully cooked.
  • 2.
    Season with a pinch of fine salt and white pepper then remove to a plate. Wipe out the wok and put it on a high heat. Add the remaining oil then the garlic shoots and garlic slices and stir-fry until the shoots are tender. Return beef to the wok with its resting juices and mix well, then season with the oyster sauce and sugar. Stir through the shaohsing rice wine and serve.
