With the addition of fresh mint and a drizzle of vino cotto, the family favourite dessert combination of strawberries and ice cream is elevated to new heights. A little bowl of Italy that's ready in minutes.

Ingredients (5)

  • 750g small ripe strawberries, hulled, halved
  • 2 tbs pure icing sugar, sifted
  • 12 small mint tip sprigs
  • 4 large scoops vanilla ice cream
  • 100ml vino cotto

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    Place strawberries in a large bowl, and place a smaller bowl on top to lightly compress. Add icing sugar and mint. Toss to combine until sugar dissolves.
  • 2.
    Spoon strawberry mixture into 4 small chilled bowls or glasses. Top with ice cream and drizzle over vino cotto. Serve immediately.

Recipe Notes

You can find vino cotto at large supermarkets and specialty grocers. A nice aged balsamic vinegar works well here, too.
