Strawberries with vino cotto, mint and vanilla ice cream

With the addition of fresh mint and a drizzle of vino cotto, the family favourite dessert combination of strawberries and ice cream is elevated to new heights. A little bowl of Italy that's ready in minutes.
Ingredients (5)
- 750g small ripe strawberries, hulled, halved
- 2 tbs pure icing sugar, sifted
- 12 small mint tip sprigs
- 4 large scoops vanilla ice cream
- 100ml vino cotto
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Place strawberries in a large bowl, and place a smaller bowl on top to lightly compress. Add icing sugar and mint. Toss to combine until sugar dissolves.

2.Spoon strawberry mixture into 4 small chilled bowls or glasses. Top with ice cream and drizzle over vino cotto. Serve immediately.
Recipe Notes
You can find vino cotto at large supermarkets and specialty grocers. A nice aged balsamic vinegar works well here, too.
