Strawberry, blue cheese and rocket salad

Sweet strawberries, bitey blue cheese and peppery rocket balance each other perfectly in this summer salad.
Ingredients (8)
- 1/4 cup (60ml) white balsamic
- 1 teaspoon Dijon mustard
- 1/2 cup (125ml) extra virgin olive oil
- 1 bunch rocket
- 250g punnet strawberries, halved
- 4 prosciutto slices
- 4 slices woodfired bread, grilled or toasted
- 200g soft blue cheese, crumbled
Method

1.Place balsamic, mustard and oil in a bowl. Season with sea salt and freshly ground black pepper, then whisk to combine.

2.Combine the rocket and strawberries in a large bowl, then tear over strips of prosciutto. Tear the grilled bread into chunks and add to the salad with the crumbled blue cheese. Toss gently to combine, then drizzle with the dressing and serve immediately.
