Sugar plums with mascarpone custard

These sticky and sweet poached sugar plums are served with mascarpone custard.
Ingredients (11)
- 1 cup (250ml) dry marsala wine
- 1 vanilla bean, split
- 2 cinnamon sticks
- 500g small sugar plums
- 75g caster sugar
- 2 teaspoons arrowroot
Mascarpone custard
- 2 eggs
- 75g caster sugar
- 1 teaspoon cornflour
- 1 1/2 teaspoons vanilla extract
- 250g mascarpone
Method

1.Preheat oven to 180°C.

2.Place the marsala, vanilla, cinnamon and sugar plums in a baking dish and sprinkle with the sugar.

3.Bake in the oven for 20 minutes then drain juice into a saucepan and place plums in a serving dish.

4.Combine the arrowroot with a little cold water, add to the plum juice, then cook over low heat, stirring until thickened. Pour over the plums and allow to cool.

5.To make the mascarpone custard, place the eggs, sugar, cornflour and vanilla in a bowl and whisk to combine. Place the bowl over a pan of simmering water and beat until thick.

6.Remove the mixture from the heat and beat over a bowl of iced water until cool. Stir in the mascarpone. Serve with the cooled sugar plums.
