Sugar plums with mascarpone custard
These sticky and sweet poached sugar plums are served with mascarpone custard.

Ingredients (11)

  • 1 cup (250ml) dry marsala wine
  • 1 vanilla bean, split
  • 2 cinnamon sticks
  • 500g small sugar plums
  • 75g caster sugar
  • 2 teaspoons arrowroot

Mascarpone custard

  • 2 eggs
  • 75g caster sugar
  • 1 teaspoon cornflour
  • 1 1/2 teaspoons vanilla extract
  • 250g mascarpone

Method

  • 1.
    Preheat oven to 180°C.
  • 2.
    Place the marsala, vanilla, cinnamon and sugar plums in a baking dish and sprinkle with the sugar.
  • 3.
    Bake in the oven for 20 minutes then drain juice into a saucepan and place plums in a serving dish.
  • 4.
    Combine the arrowroot with a little cold water, add to the plum juice, then cook over low heat, stirring until thickened. Pour over the plums and allow to cool.
  • 5.
    To make the mascarpone custard, place the eggs, sugar, cornflour and vanilla in a bowl and whisk to combine. Place the bowl over a pan of simmering water and beat until thick.
  • 6.
    Remove the mixture from the heat and beat over a bowl of iced water until cool. Stir in the mascarpone. Serve with the cooled sugar plums.
