Experience this crowd-pleasing dessert that will entertain your family and friends all summer long.

Ingredients (4)

  • 4 egg yolks
  • 1/4 cup (55g) caster sugar
  • 100ml coconut liqueur
  • Fresh fruit (such as rockmelon, peaches, nectarines, pineapple, strawberries, blueberries and golden or regular raspberries), to serve

Method

  • 1.
    Place the egg yolks, sugar and coconut liqueur in a heatproof bowl. Place the bowl over a saucepan of barely simmering water (don't let the bowl touch the water), then whisk gently to combine. Continue whisking for 5-6 minutes until very light and fluffy. Remove from the heat.
  • 2.
    Arrange the fresh fruit on a platter and serve with the warm sabayon.
