Summer peach salad

A little palm sugar makes seasonal peaches even sweeter, with a sting of chilli and herbs to keep the dish savoury.
Ingredients (8)
- 4 large yellow peaches (about 600g total), cut into 1cm wedges
- 1 tsp finely grated palm or brown sugar
- Juice of 2 limes
- Juice of 1/2 lemon
- 1 1/2 tbs extra virgin olive oil
- 1 red onion, finely chopped
- 3 long red chillies, seeds removed, thinly sliced
- 1 bunch coriander, leaves picked
Method

1.Place the peaches in a large bowl. In a small bowl, whisk the palm sugar, lemon and lime juice until sugar dissolves, then whisk in oil until combined. Pour over peaches and toss to coat. Add onion, chilli and coriander, then gently toss to combine. Serve as a side salad.
