This super easy beef starter is a flavour cut above for the raw food and meat-loving eater.

Ingredients (5)

  • 400g piece best-quality beef fillet, well-trimmed, sliced 3mm thick
  • 1 garlic clove, crushed or fi nely chopped
  • 1/2 cup flat-leaf parsley leaves, finely chopped
  • 2 1/2 tbs best-quality extra virgin olive oil
  • Zest of 1 lemon, plus juice of 1/2 lemon

Method

  • 1.
    Place beef between 2 layers of plastic wrap and beat with a meat mallet until slices are very thin and starting to break up. Cut meat into 1cm-wide strips, then place in a bowl, season, and gently toss with garlic, parsley, oil and juice. Spread over plates and serve sprinkled with zest.
