Suzie's little fruitcakes
Served in cellophane bags, these individual fruitcakes are full of festive flavours.
Ingredients (6)
- 3 tablespoons instant coffee
- 1kg mixed dried fruit
- 1/2 cup (125ml) brandy
- 250g block fruit and nut chocolate, roughly chopped
- 2 cups (300g) self-raising flour, sifted
- Cellophane bags, ribbons and clothes pegs, to decorate
Method

1.Dissolve coffee in 1 1/2 cups of boiling water. Place dried fruit, brandy and coffee mixture in a large bowl and set aside overnight to macerate.

2.Preheat oven to 160°C. Melt chocolate in a bowl over a pan of simmering water. Once melted, mix into the fruit mixture, then add flour. Spoon mixture into mini-loaf pans and bake in oven for 25-30 minutes or until cooked through.

3.Set aside to cool, then place in cellophane bags and seal with ribbons or clothes pegs.
