Sweet couscous with seasonal fruit
Couscous is extremely versatile - try it sweet in this Middle Eastern-inspired dessert.

Ingredients (9)

  • 1 cup (200g) couscous
  • 1/4 cup (50g) chopped pitted prunes
  • 1/3 cup (115g) honey
  • 1/2 teaspoon ground cinnamon, plus extra to dust
  • 1/2 paw paw or papaya, peeled, sliced
  • 1/2 pineapple, peeled, cored, thinly sliced
  • 1 orange, peeled, flesh segmented
  • Natural yoghurt, to serve
  • Slivered unsalted pistachios, to garnish

Method

  • 1.
    Place the couscous and prunes in a large bowl. Stir the honey and cinnamon into 1 1/2 cups (375ml) boiling water. Pour over the couscous, then cover and set aside for 5 minutes for the liquid to absorb.
  • 2.
    Fluff up the couscous with a fork to separate the grains, then divide among 4 bowls. Top each with a few slices of the paw paw or papaya, pineapple and a couple of orange segments. Top with yoghurt, garnish with pistachios and serve dusted with a little extra cinnamon.
