Sweet couscous with seasonal fruit

Ingredients (9)
- 1 cup (200g) couscous
- 1/4 cup (50g) chopped pitted prunes
- 1/3 cup (115g) honey
- 1/2 teaspoon ground cinnamon, plus extra to dust
- 1/2 paw paw or papaya, peeled, sliced
- 1/2 pineapple, peeled, cored, thinly sliced
- 1 orange, peeled, flesh segmented
- Natural yoghurt, to serve
- Slivered unsalted pistachios, to garnish
Method

1.Place the couscous and prunes in a large bowl. Stir the honey and cinnamon into 1 1/2 cups (375ml) boiling water. Pour over the couscous, then cover and set aside for 5 minutes for the liquid to absorb.

2.Fluff up the couscous with a fork to separate the grains, then divide among 4 bowls. Top each with a few slices of the paw paw or papaya, pineapple and a couple of orange segments. Top with yoghurt, garnish with pistachios and serve dusted with a little extra cinnamon.
