Sweet cranberry sauce

Serve this sauce drizzled over ice cream.
Ingredients (7)
- 300g frozen raspberries
- 125g frozen cranberries
- 1/2 cup (110g) caster sugar
- 1/2 cup (125ml) cranberry juice
- 1 cinnamon quill
- 2 teaspoons arrowroot
- 2 tablespoons Chambord or brandy

1.Combine the berries, sugar, juice and cinnamon in a saucepan and bring to the boil, stirring, over medium heat. Reduce heat to low and simmer, stirring, for 5 minutes or until berries start to burst.

2.Strain berry mix through a sieve into a bowl, pressing down on solids to extract all the juice before discarding. Return the liquid to the pan. Dissolve arrowroot in a little cold water, add some berry juice, then return arrowroot mixture to the pan and stir over low heat for 1-2 minutes until thickened. Stir in the Chambord or brandy, then cool. The sauce will keep, refrigerated, for up to 1 week.
