Baby cos lettuce hearts with sour cream dressing

A twist on the classic American wedge salad, this is the perfect accompaniment to barbecued meat and seafood, and just as delicious on its own.
Ingredients (8)
- 1/3 cup good-quality mayonnaise
- 2 tbs light sour cream
- 2 tsp Dijon mustard
- 2 tbs chopped chives
- Leaves of 2 baby cos lettuce hearts
- 2 chopped hard-boiled eggs
- 1/3 cup chopped fried bacon (optional)
- Chopped flat-leaf parsley, to serve
Method

1.Mix the mayonnaise, sour cream, mustard and chives with enough warm water to make a loose dressing. Place lettuce on a serving platter, scatter with the chopped egg, bacon and parsley, then drizzle with the dressing.
