Filo pastry triangles
These spicy sweet potato parcels make fantastic finger food.

Ingredients (10)

  • 2 small sweet potatoes, peeled, cut into 2cm cubes
  • 1 1/2 tablespoons olive oil
  • 1/2 teaspoon dried red chilli flakes
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1 small onion, grated
  • 1 egg, lightly beaten
  • 16 sheets filo pastry
  • 120g unsalted butter, melted

Method

  • 1.
    Preheat the oven to 200°C.
  • 2.
    Toss potatoes in oil, place on a baking tray and roast for 20 minutes or until soft. Mash in a bowl, add chilli, ground spices, onion and egg, then season with salt and pepper. Set aside to cool.
  • 3.
    Remove a sheet of filo and brush with butter. Top with another sheet and brush it with butter. Continue until you have 4 layers of pastry. Cut stack into 4 strips width ways. Place 2 teaspoons of filling at the bottom of 1 sheet, then bring a corner of the pastry over the filling and fold to form a triangle. Brush with a little butter and fold again, continuing this to the end of the pastry. Repeat with remaining pastry sheets and filling. Brush with butter and bake for 15 minutes or until golden.
