Start the countdown to speedy Asian dinner with sweet and sour pork noodles.
Ingredients (12)
- 440g packet fresh hokkien noodles
- 400g pork stir-fry strips
- 1/3 cup (80ml) light soy sauce
- 1/4 cup (60ml) sweet chilli sauce
- 2 tbs rice vinegar
- 1 tbs caster sugar
- 2 tbs sunflower oil
- 3 garlic cloves, thinly sliced
- 3cm piece ginger, thinly sliced into matchsticks
- 1 onion, sliced
- 1 large red capsicum, thinly sliced
- Thinly sliced red chilli and coriander leaves, to garnish

1.Cook noodles according to packet instructions. Drain, then set aside. Place pork, sauces, vinegar and sugar in a bowl and stir well to combine. Heat 1 tbs oil in a wok or large non-stick frypan over medium-high heat. Drain pork, reserving marinade, then stir-fry meat in 2 batches for 3-4 minutes until golden. Remove with a slotted spoon. Set aside.

2.Wipe the pan clean and add the remaining oil. Stir-fry the garlic, ginger, onion and capsicum for 1 minute or until capsicum is heated through but still has some crunch. Return the pork to the pan with noodles and the reserved marinade and stir-fry for 1-2 minutes until well combined and heated through.

3.Divide among bowls, then serve garnished with chilli and coriander.
