Taramasalata
Sweet prawns are the perfect accompaniment to salty and smoky taramasalata.

Ingredients (10)

  • 8 slices white bread, crusts removed
  • 150ml milk
  • 100g tarama (smoked cod roe)
  • 1 small onion, roughly chopped
  • 2 garlic cloves
  • 150ml olive oil
  • 2 1/2 tablespoons lemon juice
  • 1kg fresh cooked prawns, to serve
  • Warm pita bread, to serve
  • Grilled vegetables, to serve

Method

  • 1.
    Soak bread in milk, then squeeze dry, discarding milk.
  • 2.
    Place bread in a food processor with tarama, onion and garlic. Process to combine, then add oil through feed tube in a steady stream, with motor running, followed by juice. Process until smooth.
  • 3.
    To serve, place taramasalata in a serving bowl and surround with prawns. Serve as mezze with pita and vegetables.
