Taramasalata with prawns

Sweet prawns are the perfect accompaniment to salty and smoky taramasalata.
Ingredients (10)
- 8 slices white bread, crusts removed
- 150ml milk
- 100g tarama (smoked cod roe)
- 1 small onion, roughly chopped
- 2 garlic cloves
- 150ml olive oil
- 2 1/2 tablespoons lemon juice
- 1kg fresh cooked prawns, to serve
- Warm pita bread, to serve
- Grilled vegetables, to serve
Method

1.Soak bread in milk, then squeeze dry, discarding milk.

2.Place bread in a food processor with tarama, onion and garlic. Process to combine, then add oil through feed tube in a steady stream, with motor running, followed by juice. Process until smooth.

3.To serve, place taramasalata in a serving bowl and surround with prawns. Serve as mezze with pita and vegetables.
