Tarte fine with cherry tomatoes
Frozen puff pastry works well as a light and crisp base in this tart fine topped with herbed goat's cheese and sweet cherry tomatoes.
Ingredients (9)
- 375g block puff pastry
- 200g goat's feta (or soft goat's cheese)
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped fresh thyme
- 250g cherry tomatoes, halved
- 2 tablespoons (40ml) olive oil
- 1 teaspoon caster sugar
- 1 egg, beaten
- 3 tablespoons grated parmesan
Method

1.Preheat oven to 180°C.

2.Roll out the pastry to a 25 x 30cm rectangle. Transfer to a baking tray lined with baking paper. Fold in the edges of the pastry to make a border, pinching the edges together. Prick the pastry base with a fork and refrigerate for 30 minutes.

3.Mash the goat's feta with the herbs, then spread over the base. Place the tomatoes, cut-side up, over goat's fetta. Drizzle with oil and sprinkle with sugar. Season with salt and pepper.

4.Brush the pastry edges with beaten egg and bake for 10 minutes. Sprinkle tomatoes with parmesan, then return to oven for a further 10-15 minutes.
