Thai iced tea
Refreshing yet different, this Thai iced tea will help you keep your cool.

Ingredients (7)

  • 1 1/2 tbs black tea leaves
  • 2 star anise
  • 3 whole cloves
  • 1 cinnamon quill
  • 2 tbs caster sugar
  • Crushed ice, to serve
  • Sweetened condensed milk, to serve

Method

  • 1.
    Place the tea leaves, star anise, cloves, cinnamon and sugar in a large heatproof bowl. Cover with 1L (4 cups) boiling water. Allow to stand for 10 minutes to infuse. Strain the tea into a container and chill until ready to use (tea will keep in an airtight container in the fridge for 1-2 weeks).

    Divide crushed ice among 6 glasses. Pour the infused tea among glasses and top each glass with 2 tbs condensed milk to serve.
