Three cheese gratin
Cheese lovers won't be able to resist this rich and creamy gratin recipe. It's also a great side dish to make with leftovers to make at your next festive meal.
Ingredients (6)
- 300ml pure (thin) cream
- 1 garlic clove, bruised
- 1/2 bunch thyme sprigs
- 500g Dutch cream potatoes, thinly sliced
- 100g each manchego, parmesan, Gruyere or other leftover cheese, grated
- 200g leftover Christmas ham, thinly sliced
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Preheat oven to 200°C. Place cream, garlic and half the thyme in a small saucepan over medium heat. Bring to a simmer, then set aside for 20 minutes to infuse. Strain.

2.Pour a little infused cream into a 20cm non-stick ovenproof frypan. Cover base with one-quarter potato, then scatter with one-third cheese. Top with half the ham.

3.Repeat layering once, then finish with a layer of potato, remaining cream and remaining cheese.

4.Press remaining thyme into the top, then bake for 45-55 minutes until golden and potato is tender (cover with foil if browning too quickly). Rest for 10 minutes before serving.
