Cheese lovers won't be able to resist this rich and creamy gratin recipe. It's also a great side dish to make with leftovers to make at your next festive meal.

Ingredients (6)

  • 300ml pure (thin) cream
  • 1 garlic clove, bruised
  • 1/2 bunch thyme sprigs
  • 500g Dutch cream potatoes, thinly sliced
  • 100g each manchego, parmesan, Gruyere or other leftover cheese, grated
  • 200g leftover Christmas ham, thinly sliced

Method

  • 1.
    Preheat oven to 200°C. Place cream, garlic and half the thyme in a small saucepan over medium heat. Bring to a simmer, then set aside for 20 minutes to infuse. Strain.
  • 2.
    Pour a little infused cream into a 20cm non-stick ovenproof frypan. Cover base with one-quarter potato, then scatter with one-third cheese. Top with half the ham.
  • 3.
    Repeat layering once, then finish with a layer of potato, remaining cream and remaining cheese.
  • 4.
    Press remaining thyme into the top, then bake for 45-55 minutes until golden and potato is tender (cover with foil if browning too quickly). Rest for 10 minutes before serving.
