This tasty triple cheese bake gets a nutritious boost with the addition of artichoke hearts and vine-ripened tomatoes.

Ingredients (9)

  • 350g macaroni pasta
  • 1 jar three cheese pasta bake
  • 285g jar marinated artichoke hearts
  • 2 garlic cloves, crushed
  • 3 tablespoons (1/4 cup) chopped fresh basil
  • 1/2 cup (50g) grated parmesan
  • 100g fresh white breadcrumbs
  • 3 large vine-ripened tomatoes, sliced
  • 2 tablespoons olive oil

Method

  • 1.
    Grease a 2-litre oval baking dish.
  • 2.
    Cook the pasta in boiling, salted water until al dente, then drain and place in a large bowl. Stir in a three cheese pastabake sauce, the artichoke hearts, 1 garlic clove, 1 tablespoon of basil and half the parmesan.

    Season well with salt and pepper, then spoon into the prepared dish.
  • 4.
    Place breadcrumbs in a food processor with the remaining garlic, basil and parmesan, and process until combined.
  • 5.
    Arrange tomatoes over the pasta, then sprinkle with the crumb mixture. Drizzle with oil and bake for 25 minutes or until golden and heated through.
