Three cheese and yoghurt flatbreads

These cheesy flatbreads can be whipped up in minutes, and are perfect with sauce as a snack and as a side to lunch or dinner.
Ingredients (7)
- 1 1/3 cups (200g) self-raising flour
- 1/2 tsp baking powder
- 200g thick Greek-style yoghurt
- 1/4 cup (20g) parmesan, finely grated
- 30g cheddar, finely grated
- 100g feta, crumbled
- Olive oil, to brush

1.Combine flour and baking powder in a bowl with 1 tsp salt flakes. Add yoghurt and stir to combine, then add the three cheeses and knead to form a smooth dough. Turn dough out onto a well-floured surface and divide into 4 pieces. Using your hands, flatten each piece to about 2-3mm thick.

2.Place a non-stick chargrill pan or frypan over medium-high heat.

3.Lightly brush one side of the flattened dough with oil. Working in batches, cook, oiled side down, for 3-4 minutes, then flip and cook for a further 3 minutes or until golden and charred. Repeat with remaining dough. Serve hot.
