Three tomato and prawn salad

Ingredients (8)
- 1 punnet (250g) cherry tomatoes, halved
- 1 punnet (250g) yellow grape tomatoes
- 1/2 punnet (125g) red grape tomatoes
- 2 small avocados, flesh cut into cubes
- 16 cooked medium prawns, peeled, deveined, tails left intact
Vinaigrette
- 1 tablespoon sherry vinegar
- 1 tablespoon olive oil
- 2 tablespoons oregano leaves
Method

1.To make the vinaigrette, place all of the ingredients in a screwtop jar and shake well to combine.

2.Place all the tomatoes and the avocado in a bowl, then add half the vinaigrette and toss to coat. Place in a serving bowl, top with the prawns and drizzle with the remaining dressing.

3.Season with sea salt and freshly ground black pepper.
