Three tomato & prawn salad
Make the most of the tomato season with this vibrant three tomato and prawn salad.

Ingredients (8)

  • 1 punnet (250g) cherry tomatoes, halved
  • 1 punnet (250g) yellow grape tomatoes
  • 1/2 punnet (125g) red grape tomatoes
  • 2 small avocados, flesh cut into cubes
  • 16 cooked medium prawns, peeled, deveined, tails left intact

Vinaigrette

  • 1 tablespoon sherry vinegar
  • 1 tablespoon olive oil
  • 2 tablespoons oregano leaves

Method

  • 1.
    To make the vinaigrette, place all of the ingredients in a screwtop jar and shake well to combine.
  • 2.
    Place all the tomatoes and the avocado in a bowl, then add half the vinaigrette and toss to coat. Place in a serving bowl, top with the prawns and drizzle with the remaining dressing.
  • 3.
    Season with sea salt and freshly ground black pepper.
