Toast with crab and mascarpone

Mitch Orr's twist on this Italian classic makes an easy starter or indulgent snack.
Ingredients (6)
- 250g cooked fresh spanner crab or king crab meat, picked
- 250g mascarpone
- 1/2 bunch each chives, tarragon & chervil, finely chopped
- Zest & juice of 1 lemon
- 2 tbs white soy sauce (from Asian food shops)
- 6 charred thick slices sourdough or rye bread, to serve
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Place crab meat in a large sieve and gently squeeze out excess liquid.

2.Place crab and mascarpone in a large bowl with herbs, lemon zest and juice and soy sauce. Season and toss to combine.

3.Divide the crab mixture among the sourdough and serve immediately.
