Spice up sweet tomato jam with a pinch of cinnamon.

Ingredients (6)

  • 1 tablespoon olive oil
  • 1 small red onion, cut into thin wedges
  • 1 tablespoon brown sugar
  • 400g can chopped tomatoes
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons honey

Method

  • 1.
    Heat oil in a saucepan over medium-low heat. Add onion and cook for 2-3 minutes until softened. Add sugar and cook for 1-2 minutes until caramelised. Add the tomato and cinnamon, then cook for 5-6 minutes until slightly reduced. Add honey and cook for a further 5 minutes or until thick. Cool slightly, then transfer to a small bowl and serve.
