Tomatoes with stracciatella and oregano

This easy share-plate of heirloom tomatoes and stracciatella looks spectacular, yet takes minutes to pull together. Elevate your next Italian dinner party or barbecue, or just make it a magic addition to weeknight dinners.

Ingredients (7)

  • 600g heirloom tomatoes, roughly cut into chunks
  • 1 tbs white wine vinegar
  • 1 tsp dried oregano
  • 250g stracciatella cheese
  • 1/4 cup (60ml) extra virgin olive oil
  • 2 tbs oregano leaves
  • Crunchy bread, to serve

Method

  • 1.
    Combine tomatoes, vinegar and dried oregano in a medium bowl. Season, then roughly squash tomatoes with the back of a spoon. Set aside for at least 30 minutes.
  • 2.
    To serve, spoon stracciatella onto a serving plate with a lip. Top with tomatoes. Season, drizzle over oil and sprinkle with oregano leaves. Serve with crunchy bread.
