Tomato and tiger prawn pasta
Tomatoes, prawns and pasta - it's a simple but totally winning combination that everyone will love!

Ingredients (10)

  • 400g orecchiette or other short dried pasta
  • 2 tbs olive oil
  • 1 eschalot, finely chopped
  • 800g green tiger prawns, peeled, deveined, chopped
  • 2 garlic cloves, crushed

Fresh tomato sauce

  • 1 tsp coriander seeds
  • 4 truss tomatoes, seeds removed, chopped
  • Finely grated zest and juice of 1 lemon
  • 1/3 cup (80ml) olive oil
  • 1/2 bunch each basil and chives, chopped

Method

  • 1.
    Cook the pasta in a large saucepan of boiling salted water according to packet instructions. Drain.
  • 2.
    Meanwhile, for the fresh tomato sauce, toast coriander seeds in a dry frypan over medium heat for 1 minute or until fragrant. Using a mortar and pestle, grind to a fine powder. Transfer to a bowl with remaining ingredients, season and set aside.
  • 3.
    Heat oil in a large frypan over medium heat. Add the eschalot and cook for 2-3 minutes until softened. Add the prawn and garlic, then season and cook for 3-4 minutes until prawns are just cooked. Add pasta to the pan and remove from heat. Stir through tomato sauce, then serve.
