Tropical fruit salad with coconut yoghurt

Looks simple, is simple. Also looks healthy, but that yoghurt is just a little bit wicked. Use whatever fruit is in season. Recipe by Ben Cooper, from Chin Chin restaurant.

Ingredients (8)

  • 2 dragon fruit, cut into wedges
  • 1 rockmelon, peeled, seeds removed, cut into wedges
  • 1 honeydew melon, peeled, seeds removed, cut into wedges
  • 1/4 watermelon, peeled, cut into wedges
  • 1 pineapple, peeled, core removed, cut into wedges
  • 2/3 cup (190g) coconut yoghurt
  • 2/3 cup (165ml) each condensed milk & coconut cream
  • 1/2 cup (35g) shredded coconut, toasted

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    Arrange fruit on a platter. Combine yoghurt, condensed milk, coconut cream and toasted coconut in a bowl. Pour into a serving bowl and place on the platter with the fruit. Serve immediately.
