Tropical fruit salad with paw paw granita
Ingredients (14)
- 1 banana, cut into 4cm pieces
- 1 Granny Smith apple, peeled, chopped
- 1/2 paw paw, peeled, seeds removed, chopped
- 1/2 pineapple, skin removed, chopped
- 1/2 watermelon, rind removed, chopped
- 1 orange, segmented, juice reserved
- Juice of 1 lemon
- Vanilla ice cream and small mint leaves, to serve
Paw paw granita
- 1/2 paw paw, peeled, seeds removed
- 1/2 pineapple, skin removed, chopped
- 1/2 tsp ground ginger
- 1/2 cup (125ml) apple juice
- Juice of 1 lemon and 1 orange
- 1 tbs honey

1.For the granita, place paw paw, pineapple, ginger and apple juice in a blender and whiz until smooth. Strain through a sieve into a bowl. Set aside.

2.Place the lemon juice, orange juice and honey in a saucepan with 1/3 cup (80ml) water and place over a high heat. Stir to combine and cook for 2 minutes or until thickened. Pour into the strained juice and stir to combine, then transfer to a shallow container and freeze for 3 hours or until frozen. Using a fork, scrape into ice crystals. Refreeze until ready to use.

3.For the fruit salad, place all the chopped fruit in a bowl with the lemon juice and the reserved orange juice. Toss to coat in juice.

4.Remove the granita from the freezer and scrape it with a fork to loosen crystals. In serving bowls or glasses, layer the fruit and spoonfuls of granita. Top with vanilla ice cream and serve with mint leaves.
