Trout rillettes
Serves 4-6 as a starter.

Ingredients (9)

  • 250g hot smoked trout
  • 1/4 cup (60g) creme fraiche
  • 1 tsp Dijon mustard
  • 1 tbs finely chopped chives
  • 1 tbs finely chopped dill
  • lemon
  • Rye crackers, to serve
  • halved radish, to serve
  • celery stalks, to serve

Method

  • 1.
    Gently flake the trout into a bowl, discarding any bones and skin. Add the creme fraiche, mustard, chopped herbs, lemon zest and lemon juice, and mix to combine. Season with salt flakes and pepper. Transfer rillettes to a serving bowl and serve with rye crackers, radish and celery.
