Trout rillettes

Serves 4-6 as a starter.
Ingredients (9)
- 250g hot smoked trout
- 1/4 cup (60g) creme fraiche
- 1 tsp Dijon mustard
- 1 tbs finely chopped chives
- 1 tbs finely chopped dill
- lemon
- Rye crackers, to serve
- halved radish, to serve
- celery stalks, to serve

1.Gently flake the trout into a bowl, discarding any bones and skin. Add the creme fraiche, mustard, chopped herbs, lemon zest and lemon juice, and mix to combine. Season with salt flakes and pepper. Transfer rillettes to a serving bowl and serve with rye crackers, radish and celery.
