Tuna, bean, snowpea salad with herb oil

A fresh, simple and healthy tuna, bean and snow pea salad, perfect for a quick dinner or lunch.
Ingredients (11)
- 1 cup (140g) pearl couscous
- 100g green beans, trimmed
- 100g yellow (butter) beans, trimmed (substitute green beans)
- 150g snow peas, trimmed
- 2 jars (400g) Sirena Premium Tuna Fillets in Extra Virgin Olive Oil, drained
- 1 baby fennel, very finely sliced (we used a mandoline)
- ⅓ cup (55g) pistachio, lightly toasted, roughly chopped
Herb oil
- 1 cup mixed herbs (we used basil and flat-leaf parsley) plus extra herbs to serve
- ⅓ cup (80ml) extra virgin olive oil
- 1 tbs capers, plus 2 tsp extra to serve
- Finely grated zest and juice of 1 lemon

1.Bring a saucepan of salted water to the boil. Add couscous and cook according to packet instructions. Drain into a sieve and cool under cold running water. Place in a bowl.

2.Bring another saucepan of salted water to the boil and blanch green and yellow beans for 2 minutes, then add snow peas and cook for a further minute or until al dente. Drain and plunge into iced water to cool completely, then drain. Cut beans and snowpeas into bite-sized pieces and add half to the couscous.

3.For the herb oil, place all the ingredients in a blender, season and whiz until smooth.

4.Add herb oil to couscous mixture, season and toss to coat. Place on a large platter, top with tuna, fennel, remaining beans and snow peas. Scatter over pistachio, extra capers and herbs, to serve.
