A bitesized flavour burst that's perfect as a starter.

Ingredients (11)

  • 1 long green chilli, seeds removed, finely chopped
  • 1/2 cup (70g) pitted green (Sicilian) olives, finely chopped
  • 1/2 Granny Smith apple, finely chopped
  • 1 tbs extra virgin olive oil, plus extra to serve
  • 200g skinless sashimi-grade tuna, cut into 1cm cubes
  • 16 thin slices baguette, toasted
  • Baby parsley (substitute flat-leaf parsley leaves), to serve

Onion puree

  • 40g unsalted butter, chopped
  • 1 tbs extra virgin olive oil
  • 2 white onions, thinly sliced
  • 1 tsp white wine vinegar

Method

  • 1.
    For the onion puree, place butter, oil, onion and 1 tsp salt flakes in a saucepan over medium-low heat. Cover and cook, stirring occasionally, for 6-8 minutes or until onion is softened but not coloured. Remove from heat and stir through vinegar. Transfer to a blender, whiz until smooth, then chill until completely cooled.

    Meanwhile, combine chilli, olive, apple, oil, tuna and 1/2 tsp each freshly ground black pepper and salt flakes, and toss to combine. Spread cooled onion puree on baguette slices. Top with tuna mixture and scatter with baby parsley. Drizzle with extra oil to serve.
