Tuna niçoise salad
If in doubt about what to serve for lunch, this traditional French salad always goes down a treat.
Ingredients (10)
- 185g can tuna in oil (drain and retain oil)
- 2 tbs white wine vinegar
- 1 tsp Dijon mustard
- 4 small new potatoes, boiled and cut into quaters
- 12 small black olives
- 2 hard boiled eggs, cut into quarters
- 150g french beans, blanched
- 4 anchovy fillets
- 6 cherry tomatoes, cut into quarters
- 100g mixed lettuce leaves

1.To make dressing, combine retained oil, white wine vinegar, Dijon mustard, salt and pepper. Add remaining ingredients to a bowl and drizzle with dressing.
