Tuna pilau
A delicious one-pot wonder, tuna pilau can be served on its own or as part of an Indian banquet.
Ingredients (13)
- 1 tablespoon olive sunflower oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tablespoon mild curry paste (such as korma)
- 1 teaspoon ground turmeric
- 1 red capsicum, finely chopped
- 10-12 fresh curry leaves
- 1 1/2 cups (300g) basmati rice
- 3 cups (750ml) salt-reduced vegetable stock
- 1 tablespoon lemon juice
- 425g can tuna in chilli oil, drained
- 60g snow peas, thinly sliced
- Mango chutney and Indian pickle, to serve (optional)
Method

1.Heat the oil in a large frypan over medium-low heat.

2.Cook onion and garlic for 2-3 minutes until soft. Add curry paste and turmeric, and cook for 1 minute or until fragrant. Add capsicum, curry leaves and basmati rice, and stir to combine. Add the stock and lemon juice, then bring to a simmer.

3.Cover, reduce heat to low and cook for 10 minutes or until liquid is absorbed. Add tuna and snow peas, and stir gently to combine.

4.Serve tuna pilau with chutney and pickles, if desired.
