Ingredients (9)

  • 2 garlic cloves
  • 1 anchovy fillet
  • Juice of 1 lemon
  • 3 drops Worcestershire sauce
  • 1/2 cup light whole-egg mayonnaise
  • 2 tablespoons grated parmesan
  • 2 avocados
  • 185g can tuna
  • 1 tablespoon finely chopped flat-leaf parsley leaves

Method

  • 1.
    Place the garlic, anchovy, lemon juice, Worcestershire sauce, mayonnaise, parmesan and 2 tablespoons water in a processor, and process until you have a loose dressing.
  • 2.
    Halve the avocados and remove and discard the stones. Fill each avocado half with tuna, then drizzle with the dressing and sprinkle with the parsley.
