Tuna and basil pizza
Ingredients (10)
- 170g jar marinated artichoke hearts, drained
- 2 anchovy fillets
- 2 garlic cloves
- 1/4 cup (60ml) olive oil
- 1/3 cup basil leaves, plus small leaves to garnish
- 1 large pizza base (preferably wood-fired)
- 2 cups grated mozzarella
- 185g can tuna slices, drained
- 1/4 red onion, very thinly sliced
- 1/4 cup small black olives
Method

1.Preheat the oven to 200°C.

2.Place the artichokes, anchovies, garlic, olive oil and basil in a food processor, and process to a paste.

3.Place the pizza base on a pizza tray and spread with the basil paste. Sprinkle with half the mozzarella cheese and lay the slices of tuna on top. Add the red onion, then sprinkle with the remaining mozzarella cheese and black olives.

4.Place the pizza in the oven and bake for 10-12 minutes until base is crisp and cheese has melted. Garnish with small basil leaves.
