Ingredients (7)

  • Juice of 2 limes
  • 1 eschalot, thinly sliced
  • 6 large baby cos lettuce leaves
  • 500g sashimi-grade tuna, cut into 1cm pieces
  • 1 tbs finely chopped chives
  • Extra virgin olive oil, to drizzle
  • Nasturtium leaves and snow pea tendrils (optional), to serve

Method

  • 1.
    Combine lime juice, eschalot and 1/4 tsp salt in a bowl and set aside.
  • 2.
    Place cos in a bowl of iced water to crisp for 5 minutes. Drain well and set aside.
  • 3.
    Just before serving, add tuna and chives to eschalot mixture and toss to combine. Season, then divide tuna among cos lettuce cups, drizzle with oil and top with nasturtium and pea tendrils, if using.
