Turkey & ham patties with cranberry and onion sauce
Great in a burger or by themselves, these turkey and ham patties are served with an easy cranberry and onion sauce.

Ingredients (15)

  • 250g cooked ham, chopped
  • 250g cooked turkey, chopped
  • 2 teaspoons fresh thyme, chopped
  • 2 teaspoons fresh sage, chopped
  • 1 tablespoon fresh parsley, chopped
  • 300g mashed potatoes
  • 1/2 cup sliced shallots (spring onions)
  • 1 large egg
  • 60ml (1/4 cup) olive oil
  • 1 onion, thinly sliced
  • 2 tablespoons cranberry sauce
  • 3 tablespoons plain flour
  • 300ml chicken stock
  • 40ml (2 tablespoons) port
  • Salad or vegetables, to serve

Method

  • 1.
    Place the ham and turkey in a food processor and process to roughly chop. Transfer to a bowl and add the herbs, potato, shallots and egg. Mix well together. Season with salt and pepper. Form into six patties and refrigerate.

    Heat one tablespoon of the oil in a shallow frying pan over low heat. Add the onion and cook for 10 minutes until soft. Add the cranberry sauce, one tablespoon of flour, the stock and port and cook, stirring, from time to time, for 10 minutes until thickened.

    Spread remaining flour onto a plate and dip patties in the flour. Heat remaining oil in the pan over medium-high heat and fry the patties, in batches, for 1-2 minutes each side until golden. Serve the patties with the sauce and salad or vegetables.
