Turkey tostadas with avocado and sour cream
Too much turkey leftover? Lucky you! Put it to delicious use in these tasty tostadas with avo and sour cream.
Ingredients (13)
- 1 red onion, halved
- 6 tomatoes, halved
- 2 garlic cloves
- 2 long red chillies
- 2 tablespoons olive oil
- 1/2 cup chopped coriander, plus extra sprigs to serve
- 4 cups (640g) shredded cooked turkey
- 435g can refried beans
- 6 flour tortillas, toasted
- 3 cups shredded iceberg lettuce
- 1 avocado, flesh chopped
- 1/2 cup (120g) sour cream
- Lime wedges, to serve

1.Preheat the oven to 180°C. Cut 1 onion half into wedges. Place in a baking pan with tomato, garlic and chillies. Drizzle with oil, then bake for about 20 minutes or until soft and slightly charred.

2.Peel tomatoes (the skins should slip off easily). Remove and discard chilli stalk and seeds. Process roasted tomato, chilli, garlic and onion in a blender until smooth. Add coriander, then season to taste. Place turkey in a bowl and add enough of the sauce to coat (about 2 cups).

3.Heat beans in a pan over low heat for 1-2 minutes. Thinly slice remaining onion.

4.To serve, place a tortilla on a plate, spread with the warmed beans, then top with turkey, lettuce, onion, avocado and sour cream. Season, then serve with lime wedges and coriander sprigs.
