Ingredients (13)

  • 1 red onion, halved
  • 6 tomatoes, halved
  • 2 garlic cloves
  • 2 long red chillies
  • 2 tablespoons olive oil
  • 1/2 cup chopped coriander, plus extra sprigs to serve
  • 4 cups (640g) shredded cooked turkey
  • 435g can refried beans
  • 6 flour tortillas, toasted
  • 3 cups shredded iceberg lettuce
  • 1 avocado, flesh chopped
  • 1/2 cup (120g) sour cream
  • Lime wedges, to serve

Method

  • 1.
    Preheat the oven to 180°C. Cut 1 onion half into wedges. Place in a baking pan with tomato, garlic and chillies. Drizzle with oil, then bake for about 20 minutes or until soft and slightly charred.
  • 2.
    Peel tomatoes (the skins should slip off easily). Remove and discard chilli stalk and seeds. Process roasted tomato, chilli, garlic and onion in a blender until smooth. Add coriander, then season to taste. Place turkey in a bowl and add enough of the sauce to coat (about 2 cups).
  • 3.
    Heat beans in a pan over low heat for 1-2 minutes. Thinly slice remaining onion.
  • 4.
    To serve, place a tortilla on a plate, spread with the warmed beans, then top with turkey, lettuce, onion, avocado and sour cream. Season, then serve with lime wedges and coriander sprigs.
