Tuscan chips
These parmesan crusted chips sprinkled with rosemary salt are the ultimate crunchy side.
Ingredients (5)
- 1/4 cup (60ml) olive oil
- 4 pontiac or desiree potatoes, peeled, cut into thick chips
- 1/3 cup (50g) plain flour
- 1/2 cup grated parmesan
- Rosemary leaves, to serve

1.Preheat the oven to 200°C.

2.Drizzle the olive oil over a large roasting pan and place in the oven to heat up.

3.Meanwhile, place the potato chips in a saucepan of salted cold water and bring to the boil. Cook the chips for 3 minutes, then drain well. Return the chips to the still-hot saucepan and shake well to dry them out.

4.Place the plain flour and parmesan in a plastic bag and season the mixture with salt and freshly ground black pepper. Add the hot chips to the bag and toss to coat well.

5.Remove roasting pan from the oven and carefully place the chips over the base of the pan. Return the pan to the oven and roast the chips for 10 minutes, then turn them and cook for a further 10-15 minutes or until crisp and golden.

6.Drain the chips on a paper towel.

7.Toss the chips with rosemary leaves and sea salt, and serve immediately.
