Ingredients (2)

  • 300g dark (40%) chocolate, chopped
  • 600ml thickened cream

Method

  • 1.
    Place the chocolate and 300ml cream in a heatproof bowl set over a saucepan of simmering water (don’t let base of bowl touch the water) and stir until melted and smooth. Set aside for 15 minutes to cool to room temperature (you don’t want it to set).
  • 2.
    Whip the remaining cream until soft peaks. Gently fold through the chocolate mixture until there are no streaks.
  • 3.
    Transfer to a serving bowl to serve immediately, or store covered in the fridge (see note).

Recipe Notes

The mousse can be served straight away or stored, covered, in the fridge for up to 5 days. Bring to room temperature before serving.
