Cognac poached pear in a cocktail? Yes please! The Ugly Duckling’s head barman Nick Selvadurai seems to have a knack of turning the ordinary into the extraordinary.
Ingredients (6)
- 20ml cognac
- 20ml Pampero Especial
- 20ml Licor 43
- 4dsh Angostura bitters
Second step
- 30ml soy milk
- 15ml egg white

1.Combine the first list of ingredients, add Williams’ pears and allow pears to steep for at least 24 hours. Remove pears and add the below.

2.Add other ingredients, double shake and double strain. Garnish with brown sugar and a caramelised slice of “poached” pear that was removed earlier from mixture.
