Make the most of seasonal plums by baking them into a beautiful clafoutis.

Ingredients (8)

  • 5 plums, halved, stones removed
  • 2 tbs brandy
  • 2 tbs maple syrup
  • 1/2 cup (75g) plain flour
  • 600ml pure (thin) cream
  • 5 eggs, plus 4 extra egg yolks
  • 1 cup (220g) caster sugar
  • Mascarpone, to serve

Method

  • 1.
    Preheat oven to 160°C. Place plums in a bowl with brandy and maple syrup, then stir to combine. In a separate bowl, place flour, cream, eggs, yolks and sugar, and whisk to combine. Set aside at room temperature for 15 minutes. Strain plums over a bowl, adding any liquid to batter. Grease a 1.5L (6 cup) baking dish or ovenproof frypan, then pour batter into prepared pan. Press plums, cut-side up, into batter. Bake for 45 minutes or until puffed and golden.

    Serve immediately with mascarpone.
