Vanilla and lemon frosting
Vanilla Lemon Frosting
Darren Purchese of Melbourne sweet studio Burch & Purchese has come up with a quick and easy frosting recipe that can be used on a variety of cakes.
Ingredients (5)
- 300g unsalted butter, chopped, at room temperature
- 250g pure icing sugar, sifted
- Finely grated zest of 2 lemons
- 2 vanilla beans, split, seeds scraped
- 1 1/2 tbs milk
Method

1.Beat butter, sugar, lemon zest and vanilla seeds in a stand mixer on medium-high speed for 5 minutes or until thick and pale. Add the milk, reduce speed to low and beat for a further 1 minute to combine.
