1.Combine cucumber, mint, rocket and pine nuts in a bowl.

2.Heat a large frying pan over medium-high heat. Toast pita pockets for 1 minute each side or until toasted. Transfer to a plate and cover to keep warm. Cook burger patties according to packet instructions.

3.Carefully open pita pockets. Insert patty in pita and layer with salad, yoghurt, tomato and onion. Serve.
