Vegies on sticks
These grilled vegetable skewers are perfect for barbecues and big crowds.

Ingredients (4)

  • 1 large sweet potato, sliced into 1 1/2 cm-thick slices
  • 1 large Spanish onion, sliced crossways
  • 1 each red, yellow, green capsicum, seeded, cut lengthways
  • 2 tablespoons olive oil

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    Soak skewers in water for at least 2 hours to prevent them from burning.
  • 2.
    Bring a saucepan of salted water to the boil. Add the sweet potato and cook for 5 minutes until slightly softened. Drain and pat dry.
  • 3.
    Preheat barbecue. Thread a skewer through each vegetable, making sure they are secure. Brush with oil and season. Grill vegetables for about 3 minutes each side, until cooked through and slightly charred. Place on a platter to serve.
