These traditional Lebanese sweets filled with walnuts, covered in fine pastry and drizzled in syrup are the perfect accompaniment to bitter coffee.
Ingredients (8)
- 150g walnuts, chopped
- 175g caster sugar
- 1 eggwhite
- 1/2 teaspoon ground cinnamon
- 375g kataifi pastry
- 80g unsalted butter, melted
- 3 teaspoons lemon juice
- 2 teaspoons grated lemon rind

1.Preheat the oven to 180°C. Butter a medium baking dish.

2.Combine walnuts, 25g sugar, eggwhite and cinnamon in a bowl. Pull out a small handful of kataifi (keep remaining pastry covered to prevent drying out) and lay out in a square on the workbench.

3.Place a spoonful of filling in centre, fold in sides, roll into a cigar shape and place in baking dish. Repeat for remaining pastry and filling (don't allow pastries to touch). Brush with butter, then bake for 30 minutes.

4.Increase oven to 200°C and cook for a further 5 minutes until golden.

5.Meanwhile, place remaining sugar, 300ml water, juice and rind in a pan.

6.Stir to dissolve sugar, boil for 10 minutes to thicken slightly, then pour syrup over pastries.

7.Serve with Greek coffee.
