This stylish yet simple recipe is perfect for winter dinner parties.

Ingredients (4)

  • 300g good-quality dark chocolate (such as Callebaut or Valrhona), roughly chopped
  • 200g unsalted butter
  • 2 eggs, plus 4 egg yolks 60g caster sugar
  • Flaked almonds, toasted Vanilla gelato, to serve

Method

  • 1.
    Preheat the oven to 180°C.
  • 2.
    Place the chocolate and butter in a bowl set over a saucepan of simmering water (don’t let the bowl touch the water). Stir until smooth, then remove from the heat and cool slightly.

    Place the eggs, egg yolks and caster sugar in a bowl and beat with an electric mixer until it is thick, pale and very fluffy. Fold the melted chocolate mixture into the egg mixture (sabayon) with a spatula, taking care not to overmix. Divide the batter among eight 1/2-cup (125ml) ceramic or terracotta serving dishes. Bake in the oven for 10-12 minutes until the chocolate is set and risen, but remains fondant (melting)in the centre.

    Sprinkle with the toasted almonds and serve with vanilla gelato on the side.
