Flavours of pepper, aniseed and citrus combine in this simple salad.

Ingredients (5)

  • 1 bunch watercress
  • 2 oranges
  • 1 fennel bulb, thinly sliced crossways
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Method

  • 1.
    Discard woody stalks from the watercress. Wash and dry leaves. Using a small sharp knife, peel oranges removing all the pith. Cut segments away from the membrane.
  • 2.
    Place watercress and orange segments in a bowl with fennel. Mix oil and juice and season. Toss with salad and serve immediately.
