Watercress, fennel and orange salad
Ingredients (5)
- 1 bunch watercress
- 2 oranges
- 1 fennel bulb, thinly sliced crossways
- 2 tablespoons olive oil
- 1 tablespoon lemon juice

1.Discard woody stalks from the watercress. Wash and dry leaves. Using a small sharp knife, peel oranges removing all the pith. Cut segments away from the membrane.

2.Place watercress and orange segments in a bowl with fennel. Mix oil and juice and season. Toss with salad and serve immediately.
