Ingredients (9)

  • 2 tbs runny honey
  • Finely grated zest & juice of 1/2 orange & 1/2 lime
  • 1/2 tsp vanilla bean paste
  • 750g seedless watermelon, rind removed & discarded, cut into rough 5cm wedges
  • 250g strawberries, hulled, halved
  • 125g raspberries
  • Chopped pistachios & roasted sesame seeds, to serve

Honey labneh

  • 500g Greek yoghurt
  • 40g runny honey

Method

  • 1.
    For the honey labneh, place ingredients in a bowl and stir to combine. Transfer to a sieve lined with a clean Chux cloth and set over a bowl. Chill for 2-3 hours to drain, discarding liquid.
  • 2.
    Place honey, juices and vanilla in a bowl and stir to combine. Spread labneh on a serving platter, scatter with watermelon and berries, drizzle with honey mixture to taste. Scatter with zest, pistachio and sesame seeds to serve.
