Valli Little's wattleseed biscuits use the Australian native seed to make the perfect cracker for cheese.
Ingredients (5)
- 125g unsalted butter
- 1/2 cup grated cheddar cheese
- 1/2 cup grated parmesan
- 150g (1 cup) plain flour
- 2 teaspoons wattle seeds
Method

1.Place all ingredients in a food processor and process to combine. Remove dough, divide in half then roll each into a log. Roll in baking paper then refrigerate for 30 minutes. (You can freeze the dough at this stage.)

2.Preheat the oven to 180°C.

3.Cut dough into 1/2cm slices, place on trays lined with baking paper and bake for 12-15 minutes. Set aside to cool. Serve with an array of cheeses.
