Welsh rarebit steak
For a midweek meal with wow-factor, look no further than our rarebit steak with a cheesy twist.
Ingredients (11)
- 80g tasty cheese, grated
- 2 tablespoons sour cream
- 1 1/2 tablespoons Dijon mustard
- 1 teaspoon Worcestershire sauce
- Pinch of cayenne pepper
- 4 x 200g beef eye-fillet steaks
- 2 tablespoons olive oil
- 300g green beans
- 50g unsalted butter
- 2 tablespoons chopped flat-leaf parsley
- 1 tablespoon toasted pine nuts, chopped

1.Preheat grill to high. In a small bowl, combine cheese, sour cream, mustard, Worcestershire sauce and cayenne pepper. Season and set aside.

2.Season the steaks. Heat oil in a frypan over medium-high heat and cook steaks, in 2 batches, for 1-2 minutes each side for medium-rare, or until cooked to your liking. Remove steaks from heat, cover loosely with foil and rest for 5 minutes.

3.Meanwhile, blanch beans in salted boiling water for 2-3 minutes. Drain and toss with butter and parsley. Sprinkle with pine nuts and keep warm.

4.Place steaks on a foil-lined baking tray and top each one with a quarter of the cheese mixture. Place under the hot grill for 2-3 minutes until golden brown and bubbling. Serve immediately with beans.
