For a midweek meal with wow-factor, look no further than our rarebit steak with a cheesy twist.

Ingredients (11)

  • 80g tasty cheese, grated
  • 2 tablespoons sour cream
  • 1 1/2 tablespoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Pinch of cayenne pepper
  • 4 x 200g beef eye-fillet steaks
  • 2 tablespoons olive oil
  • 300g green beans
  • 50g unsalted butter
  • 2 tablespoons chopped flat-leaf parsley
  • 1 tablespoon toasted pine nuts, chopped

Method

  • 1.
    Preheat grill to high. In a small bowl, combine cheese, sour cream, mustard, Worcestershire sauce and cayenne pepper. Season and set aside.

    Season the steaks. Heat oil in a frypan over medium-high heat and cook steaks, in 2 batches, for 1-2 minutes each side for medium-rare, or until cooked to your liking. Remove steaks from heat, cover loosely with foil and rest for 5 minutes.
  • 3.
    Meanwhile, blanch beans in salted boiling water for 2-3 minutes. Drain and toss with butter and parsley. Sprinkle with pine nuts and keep warm.
  • 4.
    Place steaks on a foil-lined baking tray and top each one with a quarter of the cheese mixture. Place under the hot grill for 2-3 minutes until golden brown and bubbling. Serve immediately with beans.
